TUNA SANDWICH SUMMER EDITION

Summer is here! That means it’s time to enjoy summer vegetables and skip the stove cooking to stay cool! This cool and tasty tuna sandwich is perfect for a hot summer day. All you need is mix some sweet, crunchy, and refreshing summer vegetables with tuna, and place them in between slices of bread. Easy and delicious!

Also, this delicious and summery sandwich recipe is low in sodium and kidney and renal-diet friendly! Great to share with your friends and family!

<INGREDIENTS> make 3 sandwiches 

1/2 cup corn (whole kernel, no salt added if using canned) 

1/2 red bell peppers, finely chopped

6 oz no salt added canned tuna

1 tablespoon mayonnaise 

1 teaspoon ground black pepper 

1 small cucumber, sliced 

lettuce leaves 

6 slices bread 

<DIRECTIONS>

  1. In a large bowl, mix corn, red bell peppers, tuna, mayo, and black pepper together to make the tuna salad. 
  2. Assemble the sandwich: stack cucumber slices, tuna salad, and several lettuce leaves on top a slice 0of bread, and then top with another slice of bread. That’s it! Repeat step 1+2 to make 2 more sandwiches. Enjoy!
