Taiwanese Egg Crepe (Dan Bing 蛋餅)
Taiwanese-style egg crepe or burrito, aka dan bing, is a common street food that you’ll find in breakfast shops throughout Taiwan. A quick and easy way to recreate this street food at home is using wonton wrappers!
P.S. this recipe is kidney (renal diet) friendly!

<INGREDIENTS> for 1 serving
-4 wonton wrappers
-1 egg
-chopped green onions
-a tiny pinch of salt
-oil
-red chili sauce (optional)
<INSTRUCTIONS>
1. Beat 1 egg with chopped green onions and a tiny pinch of salt.
2. Heat a lightly oiled pan over medium heat. Once the pan is hot, pour in the egg mixture and swirl the pan a bit to spread out the mixture.
3. When bottom side of the egg is close to cooked and the top side is still runny, cover the runny side with wonton wrappers. Make sure to use enough wonton wrappers to cover up all the surface of the runny side. Mine only needed 4 wrappers to fully cover up the surface of the runny side. You can use more wrappers if the surface of your egg mixture is not fully covered with 4.
4. Continue cooking until the egg is mostly set or for about 40-60 seconds while wonton wrappers are on top. Use bottom surface of the cooking spatula to lightly press onto the wrappers while cooking.
5. After the egg is mostly set, flip the egg crepe so the wonton wrappers are now at the bottom. Cook until the wrappers are about browned. Then quickly roll the egg crepe with the egg side on the inside into a long, rectangular roll with the help of the spatula and/or chopsticks.
6. Transfer the egg crepe roll onto a cutting board and cut into sections. Serve hot.
*Optional: serve it with some red chili sauce for extra flavor! Make sure the red chili sauce you use is low in sodium to keep your heart and kidneys healthy! Your health matters!
