SUNNY STRAWBERRY SALAD

When it is still strawberry season… make sunny strawberry salad!

This salad recipe has sweet strawberries, cucumbers, vinegar pickled red onions, fragrant basil, crispy lettuce, feta cheese, soft boiled egg, honey vinaigrette, micro-greens and edible flowers. Perfectly refreshing for summer time!

People who are advised to follow renal diet can too enjoy this beautiful and refreshing salad with peace of mind!

<INGREDIENTS> for 1 hungry human

6-8 strawberries, quartered 

1/2 medium cucumber, sliced or chopped 

1 ounce feta cheese 

1.5 cups lettuce

8-10 basil leaves 

1/4 cup micro-greens 

1 soft boiled egg

optional: edible flowers 

vinegar pickled red onions:

1/2 small red onions, sliced 

2 tablespoons rice or white vinegar 

1 cup ice water

honey vinaigrette dressing: 

1 tablespoon honey 

1.5 tablespoons balsamic vinegar

1 tablespoon olive oil 

1/4 teaspoon ground black pepper 

<DIRECTIONS>

  1. In a medium bowl, add vinegar and ice water, stir to combine, then add sliced red onions. Set aside and let onions soak in the liquid mixture for at least 20 minutes before serving. 
  2. Meanwhile, prep all the other salad ingredients. 
  3. For making soft boiled egg: bring water to a boil over medium-high heat in a pot. Carefully lower an egg into water using a spoon. Cook for about 3 minutes. Transfer the egg into a bowl of ice water and chill until just slightly warm. Then peel the egg shell and slice into half before serving. 
  4. In a small bowl, add honey, balsamic vinegar, olive oil, and black pepper, then stir to mix and combine well. 
  5. On a serving plate, pile up all of the salad ingredients on top and pour the honey balsamic vinaigrette over, then toss to combine a bit with a fork. That’s it! Dig in to enjoy!
