STRAWBERRY FETA CHEESE TOAST

This strawberry and feta cheese toast is super easy to make and yummy toast to eat for breakfast or a light meal. 

For people that have been advised to watch their phosphorus, potassium, or sodium intake due to kidney issues, you can enjoy this yummy toast with peace of mind. 

Feta is a lower phosphorus-containing cheese per one ounce serving compared to other cheeses and a better choice for people who are following a low phosphorus diet.

Strawberries are a lower potassium-containing fruit and a better choice for people who are following a low potassium diet. 

Finally, no additional salt is added to make this recipe besides the relatively low amount of sodium that comes from the feta and bread. And, to be sure that you’re buying lower sodium-containing feta cheese and bread, remember to check their nutrition fact labels for sodium content.

<INGREDIENTS> for 1 toast

2-3 fresh strawberries, sliced 

1 ounce feta cheese 

1 slice sourdough or wheat or white bread or 1/2 of a ciabatta bread*** 

7-8 basil leaves 

1/2 tablespoon olive oil

1/2 tablespoon balsamic vinegar 

ground black pepper to taste 

***I used 1/2 of a ciabatta bread here. You can use a bread of your choice but just be sure it’s low in sodium and no nuts or seeds in it if you’ve been advised to watch phosphorus or potassium intake. 

<DIRECTIONS>

  1. Soak one ounce of feta cheese in room temperature water for few minutes and drain the water to reduce sodium content. 
  2. Wash and lightly pat dry strawberries and basil leaves with a paper towel. 
  3. Crumble the feta cheese on top of the bread and spread out the crumbled cheese evenly on the bread.
  4. Place strawberry slices on top of the feta and then drizzle olive oil and sprinkle some ground black pepper on top. 
  5. Place the bread with feta, strawberries, oil, and black pepper in toast oven to bake for about 5 minutes at 325 degrees Fahrenheit. 
  6. After baking, place the strawberry & feta toast on a serving plate, add basil leaves and drizzle balsamic vinegar on top of the toast, and sprinkle additional ground black pepper to taste. That’s it! Serve while it’s still warm! Enjoy!
