SOBA NOODLE SALAD

This soba noodle salad is super easy to make and perfect for da summer weather! It is also a great and refreshing dish to have whenever you’re having any sports watching parties so you and your guests can cool down from the heated πŸ”₯ game. 😁

P.S. this soba salad is also kidney (renal) diet friendly in case your guests ask. πŸ™‚

<INGREDIENTS>

-bean sprouts

-carrots

-cilantro 

-cucumber

-eggs

-red chili pepper (either fresh or dried)

-soba noodles

-toasted sesame oil

-balsamic vinegar

-honey

<INSTRUCTIONS>

1. For a serving or bowl of soba noodle salad, use 1-2 eggs. Beat eggs with a fork or chopsticks until the yolks and whites are blended. Heat a pan over medium heat and coat it thinly with oil. Pour the beaten eggs into the pan and spread them thin with a swirl motion of the pan. When both sides are cooked, transfer the thin sheet of eggs onto a round plate and let it cool.

2. While waiting for the eggs to cool, cut carrots and cucumbers into small strips, chop up the cilantro and red chili peppers, and prepare the dressing. 

3. For the dressing, the ratio of sesame oil to vinegar to honey is 3:2:1, e.g. combine 3 tablespoons of sesame oil, 2 tablespoons of vinegar and 1 tablespoon of honey together in a bowl. Mix well and then add in chopped red chili pepper and cilantro. Depending on the spicy level that you like, you can adjust the amount of chili pepper added. 

4. Cut the cooled sheet of eggs into strips. 

5. For the soba noodles, fill the pan or a pot with enough water to cover the noodles and follow the cooking instructions on the noodle package. Mine took only 4 minutes. Once cooked, drain and rinse with cold water. 

6. In a serving bowl, top the soba noodles with bean sprouts and strips of carrot, cucumber and egg. Garnish with cilantro and chopped red chili pepper (optional: sesame seeds). Lastly, pour the dressing over the soba salad and toss to combine all the goodies. Enjoy!

*Optional: if you don’t like your carrots or bean sprouts tasting too raw, you can blanch them quickly in boiling water.
