SHRIMP TOAST
This shrimp toast is a quick and no-sweat-in-the-kitchen meal to make for a busy and hot summer day!
It’s got garlicky shrimps, crunchy celery and onion, plus soft and crispy toast all in one bite.
All of the ingredients used in this recipe are lower in sodium, potassium, and phosphorus. People who have been advised to follow a renal diet can enjoy them with peace of mind! And people who are not advised to follow any diets medically can enjoy this delicious and healthy recipe too!
INGREDIENTS> for 2 servings
2 thick sliced white or wheat bread
18 cooked medium shrimps, peeled, deveined, tail off***
1/2 of a celery stalk, finely diced
1/4 of an onion, finely diced
1 green onion, finely chopped
1 clove garlic, minced
2 teaspoons mayonnaise
1 teaspoon olive oil
ground black pepper
optional: a few sliced lemon
***I used the frozen cooked medium-size shrimps from Trader Joe’s. Be sure to check nutrition fact for sodium content when you buy frozen cooked shrimps. Choose ones that contain around 5% or 140 mg or less of sodium per serving. If you cannot find close to this value, soak and rinse the frozen cooked shrimps in cold water for a little bit to reduce the sodium content.
<DIRECTIONS>
- Clean the vegetables, finely dice celery and onion, and finely chop green onion and mince garlic. (Shortcut: You can use the store-bought already minced garlic, diced celery, and diced onion too! You will save even more time being in the kitchen!)
- In a medium bowl, add shrimps, celery, onion, green onion, garlic, mayo, olive oil, and some ground black pepper, stir and mix well.
- Spread half of the mixture on top of each thick sliced bread. Press the mixture down into the bread a bit to ensure good contact and spread out the shrimps evenly. Each slice of bread should have 9 shrimps.
- Bake them at 425 degrees Fahrenheit for 10-12 minutes in a toaster oven.
- Transfer the baked shrimp toasts onto 2 serving plates. Sprinkle additional ground black pepper and squeeze a bit lemon juice on top for extra flavor if desired. That’s it! Easy and delicious! Enjoy!
