Shrimp stir-fry with basil & sweet peppers

Shrimps, basil and sweet peppers stir-fry is an easy and flavorful dish to make to include seafood two times a week and great to serve over rice. You can also substitute shrimps with calamari, squid, scallops or a white fish. If seafood is not your cup of tea, you can simply substitute the protein in this recipe with tofu, eggs or any meats you like. 

P.S. this shrimp stir-fry recipe is low in sodium and kidney (renal) diet friendly as all of the vegetables used are lower in potassium that people have been advised to watch their potassium intake can enjoy too! Also, kidney patients can enjoy delicious foods too! 

<INGREDIENTS> serve 6 people 

1 lb shrimps, peeled & deveined, tail on

4 cups chopped sweet peppers

8 oz basil leaves

6-7 cloves of garlic, chopped 

1 medium-large red chili pepper (fresh or dried), chopped 

1 tablespoon low sodium soy sauce

1 tablespoon white cooking wine

1 teaspoon sugar

1 tablespoon cooking oil 

<DIRECTIONS>

1. In a small bowl, mix red chili pepper, low sodium soy sauce, white cooking wine, and sugar together. Set aside. 

2. Add oil to a large sauté pan, heat over medium-high heat, add in garlic, sauté for about 1 minute or until fragrant and lightly browned. 

3. Add in shrimps, spread them out in the pan for even searing, cook for 1 minute, then turn the shrimps to sear the other side. Immediately, add in the sauce mixture from step #1. 

4. Cook until sauce is about 1/3 reduced. Stir occasionally. About 1 minute. 

5. Add in sweet peppers, cook and stirring for few seconds. Cook for a few more minutes or until the sauce is more than half reduced, stirring intermittently while cooking. 

6. Turn heat to low-medium. Add in basil leaves, cook and stir for about 1 minute, the sauce should be mostly reduced now. Turn off heat. 

7. Serve over rice. Enjoy!
