Salmon Rice Bowl

Having salmon rice bowl is an easy and delicious way to get in healthy omega-3 fatty acids and vitamin D for healthy brain, heart, and bone!

All you need for making this bowl is bake the salmon in oven, have some rice ready in a rice cooker or leftover rice, and some fresh cucumbers & radishes, not that much cooking is required! Perfect for a weekday meal!

P.S. this bowl is also renal diet and kidney friendly! And you can sprinkle a bit of Japanese shichimi togarashi spice on top when serving for a bit of spicy kick!

<INGREDIENTS> make about 4 bowls

12 ounces or 3/4 lb salmon filet

1/8 teaspoon of sea salt  

4 cups cooked rice 

For pickled cucumbers:

3 cups sliced cucumber

2 tablespoons rice vinegar

1/2 tablespoon sesame oil 

1/4 teaspoon granulated sugar 

For pickled Easter egg radishes:

2 cups sliced radish

1.5 tablespoons rice vinegar 

For garnish: 

1 green onion, chopped 

Optional: 

*less than 1 tablespoon black and white sesame seeds for garnish 

*Japanese shichimi togarashi spice to sprinkle on top for a bit of spicy flavor

<DIRECTIONS>

1. Baking the salmon: pat dry the salmon filet with paper towel, sprinkle 1/8 teaspoon total of sea salt on both sides of the salmon. Preheat oven to 425 degrees F with a rack placed in the middle of oven, bake for 25 minutes. 

2. While the salmon is baking, toss sliced cucumbers with rice vinegar, sesame oil, and sugar together in a medium bowl, set aside and allow to sit for at least 5 minutes for light pickling. 

3. Toss sliced radishes with rice vinegar together in another medium bowl, set aside and allow to sit for at least 5 minutes for light pickling.

4. After the salmon is done baking, break the salmon up into small flakes using either chopsticks or forks. 

5. Assembling the salmon rice bowl: scoop 1/4 of the flaked salmon and place it on top of cooked rice, add in the lightly pickled cucumbers and radishes to the bowl, and then garnish with chopped green onion and a bit of sesame seeds if desired. You can also sprinkle some Japanese shichimi togarashi spice on top for a bit of spicy kick! Enjoy!
