Roasted Cauliflower with Lemon & Parsley
This dish is super easy to make to include gourmet-like vegetables in your meals! All you need is cauliflower, lemon, parsley, olive oil, black pepper, and a sprinkle of sea salt and take a 30-minute nap while it’s cooking in the oven!
Bonus: it is low in sodium and kidney (renal) diet friendly! If you’ve been advised to watch your potassium intake, all of the ingredients used in this recipe are low in potassium.
<INGREDIENTS> serve ~4 people
1 head cauliflower, cut into florets
5 tablespoons olive oil
freshly ground black pepper
sea salt
1 cup finely chopped fresh flat-leaf parsley
lemon zest from 1 medium-sized lemon
fresh lemon juice from 1/2 of the same lemon used for zest
<DIRECTIONS>
1. Preheat oven to 425 degrees F. In a large ceramic baking dish (13×9”) or baking sheet, toss cauliflower with 4 tablespoons of olive oil, season with black pepper and a tiny sprinkle of sea salt. Roast in oven for about 30-35 minutes.
2. Meanwhile, combine and toss together finely chopped parsley, lemon juice, and the remaining 1 tablespoon olive oil in a bowl.
3. Optional: take a 30-minute nap.
4. Remove baking dish with the roasted cauliflower from oven, pour in the lemon-parsley mixture, toss to coat the cauliflower with the mixture. Top with lemon zest. Serve!
