Pesto Pasta with Zucchini and Seared Scallops

This is an easy and healthy recipe that’s also kidney (renal) diet friendly! It is easy on the salt and both the pesto and zucchini are low in potassium if you’re advised to watch your potassium intake on a renal diet.

<INGREDIENTS>

  • linguine
  • chopped zucchini
  • Genova pesto sauce (I used Trader Joe’s and confirmed it’s low in sodium)
  • scallops
  • olive oil
  • a pinch of salt
  • black pepper
  • basil leaves 

Direction: first sear the scallops and set them aside. Then, sauté the zucchini with a dash of salt & black pepper, add pesto sauce, and then toss the cooked linguine in the pesto with zucchini. Lastly, top the pasta with seared scallops and basil to finish!
