OPEN-FACED FRIED EGG SANDWICH

This open-faced fried egg sandwich with lettuce, cucumber, sautéed onion, and a bit of spicy aioli is a super easy and quick nutritious meal to make. Perfect for any meals of a day and when you’re short on time. Also, in the midst of the global pandemic, don’t forget to nourish your body with healthy nutritious meals to keep your immune system strong! #yourhealthmatters

P.S. this sandwich is also kidney (renal) diet friendly. People who have been advised to watch their sodium and potassium intakes can enjoy this deliciously healthy sandwich too!

<INGREDIENTS> 1 serving 

1 slice sourdough bread (look for lowest sodium ones) 

4-6 leaves of lettuce, washed and dried 

3 or more slices of cucumber, washed and sliced 

1/3 of a medium onion, sliced 

1 egg 

less than 1 tablespoon of mayo 

1/3 teaspoon of cayenne powder 

olive oil 

<DIRECTIONS> 

1. Pour some olive oil onto a sauté pan, heat oil over medium heat, crack an egg into the pan, cook until white is set, then flip and cook until yolk is set. (Optional: use aluminum foil and fold into a heart-shaped rim or use a heart-shaped cookie cutter, place it on the pan, then crack an egg into the heart-shaped rim, to make a heart-shaped fried egg!) 

2. While the egg is cooking on half side of the pan, pour in the sliced onions onto the other half of the same pan, stir and sauté until lightly browned or caramelized. 

3. Transfer the cooked egg onto a plate. 

4. Place the sourdough bread onto the pan to toast for a bit. Flip to toast both sides and toast until the texture of your desire. Meanwhile, continue to sauté the onions if you like it more browned or caramelized. 

5. In a small bowl, combine mayo and cayenne powder, mix them well to make spicy aioli. 

6. Assemble the open-faced sandwich! First, place lettuce on the toasted bread, add cucumber slices over lettuce, add sautéed onions over cucumber, and then top with the fried egg. Lastly, drizzle the spicy aioli on top to spice up the sandwich! You can sprinkle additional cayenne powder on top if you like extra spicy!
