Mini Strawberry Tarts

Have you tried making strawberry tarts with wonton wraps before?

This is an easy-to-make and yummy bite-size strawberry dessert/snack! Also, these tarts are kidney (renal) diet friendly as all of the ingredients used in this recipe are low in both potassium and phosphorus in case you’ve been advised to watch your potassium and/or phosphorus intake. They are easy on the sugar too!

<INGREDIENTS>

-24 wonton wraps 

-8 oz cream cheese 

-1 lemon 🍋 to make lemon zest and 2 teaspoons lemon juice 

-3 teaspoons honey 🍯 

-2 lbs strawberries 🍓, sliced 

-mint leaves

<INSTRUCTIONS>

For the tart shell: preheat oven to 325F. Place the wonton wraps into 12-serving muffin pans (non-stick). Bake for 7-9 minutes until golden brown. Remove from oven and allow the wraps to cool completely. 

For the tart cream filling: in a mixing bowl, beat cream cheese, lemon zest, lemon juice and honey together until well-combined. 

For assembling the tarts: divide and place the cream into each cooled wonton wrap. Place the sliced strawberries on top of the cream and then garnish with mint to finish.
