Microwave Cooked Chicken With Mixed Veggies

Life can get super busy and cooking shortcuts are a must to make eating healthy easier and stay well nourished. 

This super easy recipe utilizes the convenience of microwave to make a quick, tasty, and healthy dish that’s got lean protein and plentiful of veggies. 

The lean chicken breast cooked in the microwave turned out moist, juicy, and tender with the addition of small amount of rice cooking wine. 

The pre-cut and ready-to-cook frozen mixed veggies is a great time-saver and provides a super easy way to include veggies in our daily meals. 

Simply serve this microwave-cooked chicken and mixed veggie dish with the right portion of rice or noodles or tortillas for a delicious and kidney friendly meal. This recipe is low in both sodium and potassium. People who have been advised to watch their sodium and/or potassium intake can enjoy this with peace of mind! 

<INGREDIENTS> serve 2 hungry persons 

5 ounces chicken breast, chopped into about bite size 

1/2 tablespoon rice cooking wine

1 tablespoon olive oil

1/4 teaspoon black pepper

1/8 teaspoon white pepper

tiny pinch of salt

1 cup frozen green beans*

1 cup frozen mixed veggies (green beans, carrots, corn, and peas mix)*

2 cups cooked rice 

*Be sure to double check the nutrition fact labels for sodium content and choose the frozen veggies that contain less than 140 mg sodium per serving. 

<DIRECTIONS> 

  1. In a large bowl, marinate the chopped chicken with rice cooking wine, olive oil, black pepper, white pepper, and a tiny pinch of salt for about 1-2 minutes. 
  2. Add in the frozen veggies to the large bowl, stir with a spoon or spatula to combine veggies and the marinated chicken well. 
  3. Cover the bowl of chicken and veggies with a piece of parchment paper and heat chicken and veggies in microwave for 2 minutes and 30 seconds. Then take out from microwave, stir the chicken and veggies with a spoon or spatula to allow even cooking for the second half of heating. Place back in microwave and heat for another 2 minutes and 30 seconds. That’s it! Chicken should be cooked through and veggies are tender. 
  4. Simply serve this chicken with mixed veggies over some cooked rice for a meal. Sprinkle some ground black pepper or dried chili pepper flakes to taste if desired. Enjoy!
