Japanese-style Ginger Pork (Pork Shogayaki)

Do you need some lunch box ideas? Japanese-style ginger pork (pork shogayaki) served with rice, shredded cabbage, and shishito peppers is perfect for a weekday lunch or dinner bento box!

Also, this recipe is low in both sodium and potassium. Both cabbage and onion are low in potassium vegetables. People who have been advised to watch their sodium and potassium intake can make and enjoy this gingery and flavorful meal too! #yourhealthmatters.

<INGREDIENTS> serves ~5 people 

For Marinate: 

1 lb (16 oz) pork loin sliced  

2 teaspoons ginger juice (from grated ginger) 

2 tablespoons sake (Japanese rice wine) 

For Ginger Sauce: 

2 tablespoons grated ginger 

2 tablespoons sake (Japanese rice wine) 

1 tablespoon mirin

2 tablespoons low sodium soy sauce

1/2 teaspoon sugar 

For Cooking and Serving: 

1 tablespoons olive oil or cooking oil 

1 large yellow onion sliced 

4 cups shredded cabbage 

1/2 cup chopped green onions to garnish  

*Optional: fresh shishito peppers

<DIRECTIONS>

1. Marinate the sliced pork with ginger juice and sake for about 10 minutes. 

2. Mix all of the ginger sauce ingredients in a bowl. 

3. Heat oil in a pan over medium heat and brown the pork slices on both sides. Try not to overlap the meat, cook in batches if required. If cooking in batches, transfer the cooked meat onto a plate and cook the remaining. 

4. Return all the cooked meat to the pan and add in sliced onion. Stir and mix. 

5. Add in the ginger sauce to the pan. Stir fry until the sauce is incorporated. Cover the pan and cook over medium heat for about 5 minutes or depends on how crisp and crunchy you want your onions. 

6. Remove cover, stir and mix to ensure both meat and onion are coated with the sauce. When the cooking liquid is reduced to about 50%, turn off the heat. 

7. *Optional: transfer cooked ginger pork to a bowl. Using the same pan, add in a bit cooking oil, over medium high heat, sauté the shishito peppers for about 3 minutes. 

8. Serve ginger pork with rice and shredded cabbage on a plate. Pour some of the cooked ginger pork sauce over the cabbage for dressing. Finally, garnish with chopped green onions. *Optional: serve with a few sautéed shishito peppers for extra flavor!
