Hamburger Curry Over Rice
This Japanese-style hamburger curry over rice is a flavorful, nutritious and comforting meal to make to fuel the body and get through the middle of the week.
Also, this original recipe is low in sodium and all of the plant-ingredients used are lower in potassium content that everyone including people who need to watch their potassium intake can enjoy! #yourhealthmatters
<INGREDIENTS> serve ~5 people
For hamburger patty:
1 lb ground beef (85% lean)
1/2 of medium onion, finely chopped
1 clove garlic, minced
a pinch of black pepper
a pinch of salt
2 tablespoons olive oil
For the curry:
1 medium apple, peeled and diced
2 carrots, peeled and chopped
1 and 1/2 medium onions, chopped
2 small zucchini, chopped
1/2 of a large cauliflower, cut into florets
3-4 tablespoons curry powder
1 tablespoon all purpose flour
Water
<DIRECTIONS>
1. In a medium-large bowl, combine and mix ground beef, onion, garlic, black pepper and salt together until everything well combined. Use clean hands to make the ground beef mixture into 5 hamburger patties.
2. Use a large sauté pan, add olive oil, heat over medium heat. Place 5 hamburger patties on the pan and cook each side for 3 to 5 minutes or until cooked through for well done. Transfer the cooked patties onto a plate and place on stovetop to keep them warm.
3. Use the same sauté pan, add in apple, carrots, onions, and zucchini, then stir and sauté using the remaining fats (olive oil and beef fat) in the pan for a couple of minutes over medium heat. Then add in water until the water level is about 1/2” above the vegetables. Cook and boil with lid covered for about 4-5 minutes over medium-high heat.
4. Add cauliflower and curry powder into the pan. Stir and mix, until curry powder is well mixed in. Cook and boil over medium heat for another 5 minutes with lid covered.
5. Turn to low heat, wait until the boiling bubbles disappear, add in 1 tablespoon of flour, stir and mix the flour well with the liquid in the pan to help thicken the curry sauce. Simmer over low heat for 3-4 more minutes, stir occasionally.
6. Serve the hamburger patty and the curry over cooked rice. Itadakimasu!
