Garlic Salmon Pasta with Snow Peas

P.S. this recipe is kidney and renal diet friendly. People who have been advised to watch their sodium, potassium, and phosphorus intake can enjoy this delicious pasta dish with peace of mind!

<INGREDIENTS> serve ~5 people 

3/4-1 lb salmon 

3 cups chopped snow peas

9-10 cloves garlic, chopped 

1/2 cup chopped parsley

1/2 lb (8 oz) pasta of your choice

2 tablespoons olive oil 

sea salt 

ground black pepper 

grated Parmesan cheese 

<DIRECTIONS> 

1. Bake the salmon: pat dry the salmon filet with paper towel, sprinkle 1/8 teaspoon total of sea salt and some ground black pepper on both sides of the salmon, place on a baking sheet or dish. Preheat oven to 425 degrees F with a rack placed in the middle of oven, bake salmon for 25 minutes.

2. While salmon is baking, wash and chop snow peas and parsley and chop garlic. 

3. Cook pasta in a large pot with boiling water following the instructions on the pasta package. Mine took about 6-7 minutes to cook. Make sure to turn off heat once pasta is cooked to about al dente texture and drain about 80% of the pasta water out of the pot. 

4. Once salmon is done baking, add olive oil into a large sauté pan, heat pan over medium heat, add in chopped garlic, let cook and stir occasionally for a couple minutes until garlic is softened and fragrant. 

5. Add chopped snow peas into the sauté pan, stir to combine with garlic using a spatula for 5-10 seconds, add in a spoonful of pasta water, let cook for a couple minutes or until snow peas are lightly softened. 

6. Add baked salmon into the sauté pan, break the salmon filet up into small chunks or flakes using a spatula, then add in cooked pasta and stir to combine everything, about 1-2 minutes. Turn off heat. Lastly, sprinkle chopped parsley over, stir for a bit to combine with pasta. Serve warm on plates, sprinkle some grated Parmesan cheese on top, and enjoy!
