Garlic Mashed Cauliflower
This delicious and healthy mashed cauliflower recipe is so easy to make and a great way to add vegetable and natural dietary fiber to your meals! It is also lower in potassium content compared to mashed potato that people who have been advised to watch their potassium intake can savor this delicious dish too!
<INGREDIENTS> 4-5 servings
1 head cauliflower, cut into florets (or use pre-cut cauliflower)
1 tablespoon olive oil
1 clove garlic, chopped
2 oz plain cream cheese (low sodium)
1/4 cup grated Parmesan cheese
ground black pepper to taste
a pinch of chives chopped for garnish
<DIRECTIONS>
1. In a pot, bring water to a boil. Place cauliflower florets in the boiling water, cook until tender, about 8-10 minutes. Then remove the water.
2. Meanwhile, heat olive oil in a small skillet over medium heat, add in chopped garlic, cook and stir until garlic is softened. Remove from heat.
3. Transfer cooked cauliflower to a food processor or blender and add in the garlic olive oil, cream cheese, Parmesan cheese, and black pepper. Cover and blend on high until a creamy texture. Then transfer the mashed cauliflower to a serving bowl and garnish with chopped chives to finish.
*If a food processor or blender is not available, use a potato masher to mash the cooked cauliflower until smooth and no large chunks remain. Then stir in garlic olive oil, cream cheese, Parmesan cheese, and black pepper and mash until all the ingredients are well combined and a creamy consistency.
