Egg and Veggie Burrito

Scrambled eggs with veggies + flour tortilla = tasty egg and veggie burrito! This is a super easy and quick meal to prepare for a busy work week. You can also serve the burrito with a side of lightly pickled radish for extra crunch and flavor!

P.S. both the burrito and pickled radish are lower in sodium, potassium, and phosphorus if you’ve been advised to watch these intakes. People with chronic kidney disease can enjoy tasty burritos too!

<INGREDIENTS> serve 2 people 

For the burrito: 

2 slices of 8-inch flour tortilla 

2 eggs, beaten 

1/2 cup sliced onion

1/2 cup sliced bell peppers 

6 sprigs of cilantro

1 tablespoon of cooking oil 

For the lightly pickled radish: 

4 radishes sliced 

1 tablespoon of rice vinegar 

1 teaspoon sugar 

1/8 teaspoon sea salt 

<DIRECTIONS>

1. In a medium-sized glass container or bowl with lid, toss the sliced radish, vinegar, sugar, and salt together, then cover with lid and set aside. *Note:  be sure to make the pickled radish before making the burrito to allow some time for light pickling. 

2. Heat oil in a large sauté pan over medium-high heat. Add sliced onion and bell peppers, cook, stirring occasionally, until onion is about translucent, about 2 minutes. 

3. Reduce heat to medium. Pour the beaten eggs evenly over the sautéed vegetables in the pan. Let cook for a couple of minutes or until the eggs begin to set. Then stir the eggs and vegetables together until eggs are about fully cooked, about 3-4 minutes. 

4. Cover 1 slice of tortilla on a plate with a damp towel and heat in microwave for about 20 seconds to warm it up. Tortilla is easier to fold and roll when it’s warm. 

5. Scoop about half of the scrambled eggs with veggies onto the warmed tortilla, add a few sprigs of cilantro over the eggs, then fold and roll into a burrito shape. Repeat steps #3 and #4 for the remaining tortilla. Serve the burrito with the lightly pickled radish for extra flavor and tasty crunch! Enjoy immediately!
