Curry Shrimp Stir Fry with Pineapple, Bell Pepper and Onion

This is an easy stir fry to make on a weekday and low in sodium yet very flavorful to keep your palate, heart, kidneys, and liver happy! You can simply serve it over steamed rice for a happy meal!

Also, this dish is renal-diet friendly. All of the ingredients used are lower in potassium, phosphorus, and sodium. It is perfect for including seafood twice a week too!

<INGREDIENTS> serve 4 hungry persons

1/2 of a fresh pineapple, chopped into chunks

2 small yellow onions, chopped 

4-6 bell peppers, chopped 

4-5 cloves garlic, minced 

16 shrimps (peeled, deveined, tail on), pat dry with paper towel 

1.5 tablespoons curry powder

1 tablespoon cooking oil 

a tiny pinch of sea salt 

optional: basil leaves to garnish 

<DIRECTIONS>

1. Use a large sauté pan with lid, heat oil over medium heat. Once the oil is shimmering, add garlic and cook for about 1 minute or until fragrant and lightly browned.

2. Add in pineapple chunks, cook over medium-high heat until most pineapple chunks are lightly caramelized, stir occasionally, about 5 minutes. 

3. Add in chopped onion, stir to combine with pineapple and garlic with a spatula. Let cook for about 4 minutes or until the onion is lightly translucent, stir occasionally. 

4. Add shrimps, stir to combine, let cook until one side of shrimps turns pink, about 2-3 minutes.

5. Add in curry power and a tiny pinch of sea salt. Stir to combine everything with a spatula, about 30 seconds to 1 minute. 

6. Add in chopped bell peppers and stir to combine well, about 30 seconds to 1 minute. Cover with lid and cook over medium heat for about 3-4 minutes, stir occasionally. Then uncover the lid, stir a little bit to combine everything with spatula again, the bell pepper should be lightly softened but still with some crunch. 

7. Serve over a bed of steamed rice. Garnish with basil if desired and enjoy while it’s warm!
