<INGREDIENTS> for 1 toast
2-3 fresh strawberries, sliced

1 slice sourdough or wheat or white bread or 1/2 of a ciabatta bread***
7-8 basil leaves
1/2 tablespoon olive oil
1/2 tablespoon balsamic vinegar

***I used 1/2 of a ciabatta bread here. You can use a bread of your choice but just be sure it’s low in sodium and no nuts or seeds in it if you’ve been advised to watch phosphorus or potassium intake.
<DIRECTIONS>
- Soak one ounce of feta cheese in room temperature water for few minutes and drain the water to reduce sodium content.
- Wash and lightly pat dry strawberries and basil leaves with a paper towel.
- Crumble the feta cheese on top of the bread and spread out the crumbled cheese evenly on the bread.
- Place strawberry slices on top of the feta and then drizzle olive oil and sprinkle some ground black pepper on top.
- Place the bread with feta, strawberries, oil, and black pepper in toast oven to bake for about 5 minutes at 325 degrees Fahrenheit.
- After baking, place the strawberry & feta toast on a serving plate, add basil leaves and drizzle balsamic vinegar on top of the toast, and sprinkle additional ground black pepper to taste. That’s it! Serve while it’s still warm! Enjoy!
