STRAWBERRY CUCUMBER PASTA SALAD
Strawberries are a great addition to salads. They are packed with goodies like vitamin C, antioxidants, and fiber. And they are a lower potassium-containing fruit that people who have been advised to follow a low potassium diet can enjoy this beautiful and juicy fruit too!
This strawberry cucumber pasta recipe is super easy to make. All you need is chop up the strawberries and veggies, and toss them with cooked pasta and a low-sodium-kidney-friendly honey vinaigrette dressing. That’s it!
<INGREDIENTS> for two hungry humans
8 strawberries, chopped
2 Persian cucumbers, chopped
1 large yellow bell peppers, chopped
few sprigs of cilantro, chopped
1 cup uncooked farfalle or bow-tie pasta
For the salad dressing:
1 tablespoon balsamic vinegar
1.5 tablespoons olive oil
1 tablespoon honey
1 teaspoon ground black pepper
1 teaspoon mustard
1/8 teaspoon sea salt
<DIRECTIONS>
- Clean and wash the vegetables and strawberries, pat dry with towel, and chop them into small pieces, and then place them in a large salad bowl. Set aside.
- Cook the pasta following instructions on the pasta package. Once pasta is cooked, drain water and run the pasta with cold water until pasta is no longer hot to touch.
- In a bowl, combine all of the salad dressing ingredients, and stir and mix well.
- Add the cooked pasta to the large salad bowl with chopped veggies and strawberries.
- Pour the honey vinaigrette dressing over the salad ingredients, and then gently toss until combined. Enjoy!
