Caramelized Onion, Roasted Eggplant, Basil and Pesto Sandwich

Caramelized onion, pan-roasted eggplant, basil, and basil pesto on a ciabatta is a super easy and delicious plant-based sandwich to make! It’s great for a brown bag lunch and the outdoor picnic too!

This sandwich is also kidney and renal-diet friendly! If you or your friend and family have been advised to watch sodium, phosphorus, and potassium intake, you can enjoy and share this tasty sandwich with peace of mind!

<INGREDIENTS> for 1 sandwich 

1 small onion, sliced 

6 (1/4 inch) slices of eggplant 

6-8 basil leaves, washed and pat dry 

2 tablespoons basil pesto (be sure to double check the nutrition label on the pesto container that sodium content is less than 140 mg per serving) 

1 ciabatta bread or bread of your choice*

cooking oil 

a tiny pinch of sea salt 

*If you’ve been advised to watch potassium and phosphorus intake, be sure to use bread without any nuts and seeds! 

<DIRECTIONS>

For caramelized onion: 

  1. Heat 1 tablespoon cooking oil over medium heat on a skillet pan, add the onion and cook for 5 minutes or until the onion soften. Stir frequently while cooking. 
  2. Sprinkle a tiny pinch of sea salt over the onion, reduce heat to medium-low and cook for another 20 to 25 minutes, stirring every few minutes, or until the onion is golden brown and caramelized. Note: if a lot of sticky brown bits start forming on the bottom of the pan, splash with a little bit of water and continue cooking so that nothing burns while caramelizing the onion. 

For pan-roasted eggplant: 

  1. Heat 1 tablespoon cooking oil over medium-high heat on a large skillet pan. Lay out the eggplant slices on the pan so they do not overlap and cook 3 minutes for each side. 

To assemble the sandwich: 

  1. Slice the ciabatta bread into 2 slices. 
  2. Spread 1 tablespoon of basil pesto on each slice of the ciabatta bread.
  3. Stack up caramelized onion, pan roasted eggplant, and basil leaves between the sliced bread. That’s it. You got a tasty sandwich! Serve and enjoy immediately!
