Ginger and Egg Fried Rice

Ginger and egg fried rice is so aromatic, simple, and comforting, and it reminds me of the taste of home back in Taiwan. 

Besides making the kitchen so aromatic, ginger is found to have many interesting compounds or goodies that may have anti-inflammatory, anti-bacterial, anti-cancer, and other healthful properties that could help you feel better. 

And yes, this ginger and egg fried rice is kidney (renal) diet friendly too!

<INGREDIENTS> serve 3 people 

2 tablespoons olive oil 

2 tablespoons finely chopped ginger 

4 eggs, beaten

3 cups of rice (refrigerated overnight rice works best) 

Optional: 1/3 cup chopped green onion for garnish 

<DIRECTIONS>  

1. Heat oil over medium-low heat in a large sauté pan, add in chopped ginger, cook until the ginger is golden brown with nice gingery aroma, about 2 minutes. 

2. Pour the beaten eggs into the pan, swirl the pan a bit to spread out the eggs evenly, cook until the bottom side of the eggs is mostly set. 

3. Pour the overnight rice on top of the eggs, use a spatula to chop and separate the rice, and then stir the rice, eggs, and ginger together over medium heat. Sprinkle a tiny pinch of salt and then continue to stir and mix until everything well combined and no rice clumps, about 4-5 minutes. 

4. Scoop the fried rice onto plates and garnish with chopped green onions if desired, serve immediately. Enjoy!
