KOREAN STREET TOAST (GILGEORI TOAST)
Gilgeori toast is a Korean street sandwich that is buttery, crunchy, and savory. It is pretty easy to recreate this tasty sandwich at home and the sandwich is perfect for breakfast or a quick meatless meal!
Bonus: this toast recipe is also kidney (renal) diet friendly that people have been advised to watch sodium, potassium, and phosphorus intake can enjoy Korean street food too! ❤️
<INGREDIENTS> for 1 serving
1+ cup sliced cabbage
1/2 cup carrots, julienned
1/4 cup chopped scallions
a tiny pinch of salt (less than 1/8 tsp of salt)
1 large egg
1/2 tablespoon olive oil
1/2 tablespoon unsalted butter
2 slices white bread
2 pinches of sugar (less than 1/4 tsp of sugar)
mayonnaise
<DIRECTIONS>
1. In a medium bowl, mix sliced cabbage, carrots, scallions, and salt together with one hand and give the vegetable mixture a bit of massage to help tenderize the vegetables. This also helps the vegetables hold together more when cooking in the pan.
2. Crack and add the egg into the bowl, mix using chopsticks or a fork until the egg is well combined with the vegetables.
3. Heat oil in a sauté pan over medium heat, pour the egg and vegetable mixture onto the pan, quickly shaping the mixture into a square that is about the size of your bread using a spatula. Let cook until the egg is set and no longer runny, about 1-2 minutes. Flip the egg vegetable omelette over, lower the heat to medium-low, let cook until the bottom side is lightly browned and vegetable is tender, about 2-3 minutes. Remove from heat and set aside on a plate.
4. Melt butter in the sauté pan over medium-low heat. Toast the bread slices in melted butter in the pan until both sides are nicely browned.
5. Sprinkle a pinch of sugar on each slice of the toasted bread.
6. Assemble the Korean street toast: place the egg vegetable omelette on top of the sugared side of one toasted bread, spread some mayo on top of the omelette, then cover with the other toasted bread with sugared side facing down. That’s it! Serve and enjoy!
