Sourdough Starter Creme Fraiche Pancakes
When you have sourdough starter discards and leftover creme fraiche… try making sourdough starter creme fraiche pancakes! They are soft and moist with a light sweet milky flavor. A very tasty and next-level pancake recipe to make for your stay-at-home brunch and not wasting your sourdough starter discards!
P.S. these pancakes are low in sodium and kidney (renal) diet friendly too!
<INGREDIENTS> make 11-12 4-inch pancakes
2/3 cup sourdough starter discard (use the discards from the first few days of making the starter)
1/2 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup crème fraîche
1 large egg
1/2 cup milk
1 and 1/2 tablespoons unsalted butter, melted
berries (optional for topping)
mint leaves (optional for garnish)
<DIRECTIONS>
1. In a large bowl, mix together all-purpose flour, sugar, baking soda, and salt. Set aside.
2. In a medium bowl, whisk together creme fraiche, egg, milk, and melted butter.
3. Pour in both the sourdough starter and creme fraiche mixture into the large bowl with dry ingredients, whisk and mix everything together until well combined.
4. Heat a cooking pan or skillet over medium heat, grease the pan surface with a bit of unsalted butter, spoon about 3 tablespoons of batter onto the pan for each pancake, cook until some bubbles appear on surface of the pancake and underside is golden brown, about 1-2 minutes (you should be able to fit 2 pancakes in a large pan). Flip the pancakes and cook for 1-2 minutes more or until golden brown. Transfer to serving plates. Repeat with the remaining batter.
5. Optional: serve the pancakes with berries of your choice and garnish with a few mint leaves and a bit of powdered sugar. Enjoy!
