<INGREDIENTS> yield 16 bars
Crust:
1 cup (2 sticks) unsalted butter
2 cups all purpose flour
1/4 cup granulated sugar
less than 1/4 teaspoon of kosher salt
Filling:
1 and 1/2 tablespoons granulated sugar
1/4 cup all purpose flour
1/2 teaspoon baking powder
4 large eggs
4 oranges, to make into zest and squeezed into juice
1 orange, thinly sliced into 16 small wedges
powdered sugar, for garnish (optional)
<DIRECTIONS>
1. For the crust: preheat the oven to 350 degrees F. Grease a 9×13” baking pan with a bit unsalted butter.
2. In a large mixing bowl, beat butter with a hand mixer until creamy, then add in flour, sugar and salt and beat until the mixture looks like fine crumbs. Press into the bottom of the prepared baking pan and bake for 18 minutes.
3. While the crust is baking, make the filling. In a mixing bowl, add in sugar, flour, baking powder, eggs, orange juice and zest, whisk and mix everything together until well combined. Pour over the crust. Bake for 15 minutes.
4. Remove the baking pan from oven, place the thinly sliced orange wedges on top of the filling and have them evenly spaced out to make 16 servings/bars. Return the pan to oven and bake for another 15 minutes.
5. Remove from oven and cool completely before garnishing with powdered sugar on top and cutting into bars. Serve and enjoy!
