Parmesan Garlic Corn
Parmesan garlic oven-roasted corn on the cob is an easy, flavorful, and low sodium side dish to make for your sweet heart and kidneys on a weekday!
Also, the month of February is national heart health month and one of the ways to protect your sweet heart and kidneys is reduce salt/sodium intake in your diet! Wish you happy healthy eating and happy month of ❤️!
<INGREDIENTS> serves 8
8 ears fresh corn, husks removed
5 cloves of garlic, minced
1 tbsp unsalted butter, melted
2 tbsp olive oil
1/4 tsp cayenne pepper
2-3 tbsp Parmesan cheese
1 cup chopped parsley
<DIRECTIONS>
1. In a bowl, combine olive oil, minced garlic, melted unsalted butter, and cayenne pepper.
2. Rub and coat each ear of corn with the oil mixture, and place them on a baking sheet with parchment paper or ceramic baking dish.
3. Sprinkle each ear of corn with Parmesan cheese.
4. Preheat oven to 400 degrees F. Roast corn for 15 minutes, turn each ear of corn, sprinkle Parmesan cheese and chopped parsley on top, then continue baking for another 10-12 minutes.
5. Serve on plate, add more chopped parsley to taste and garnish, and more cayenne pepper if you love spicy!
