Honey Glazed Carrots
This is an easy-to-make and kidney-friendly dish that could be part of your Thanksgiving feast!
<INGREDIENTS> 4 servings
1 lb carrots, peeled
1/2 tablespoon olive oil
1/2 tablespoon unsalted butter
1.5 tablespoons honey
1/2 tablespoon lemon juice
1/4 cup flat-leaf parsley, chopped
ground black pepper to taste
a pinch of salt
<DIRECTIONS>
1. In a large saute pan, bring water to a boil. Add a pinch of salt to the boiling water and then carrots. Cook until tender, about 5 minutes. Then, take out the carrots and place them on a plate when removing the water from the pan.
2. After the water is removed, add olive oil, unsalted butter, honey and lemon juice into the saute pan. Stir over low heat to combine all of the ingredients.
3. Add the carrots back into the pan. Cook until a glaze coats the carrots, about 5 minutes. Season with ground black pepper and chopped parsley. Additional chopped parsley to garnish.
