Egg Salad Sandwich

Good ol’ egg salad sandwich with refreshing crunch from the celery and natural sweetness from the Fuji apple!

This simple egg salad recipe is kidney (renal diet) friendly! ❤️ Both apple and celery are low in potassium if you’re watching your potassium intake. And, both mayo and black pepper are low sodium/salt free condiments that won’t stress your kidneys! 🥳 Let’s be kind to our kidneys together! 😊

<INGREDIENTS> Serves 4

-4 hard boiled eggs, 1 egg cut into 4 equal parts and 3 eggs chopped 

-6 medium-long celery sticks, finely chopped

-2 small or 1 large Fuji apples, sliced and diced  

-2 tablespoons mayonnaise

-black pepper

-white or wheat* bread

-chopped green onion, for garnish 

*If you’re watching your potassium intake, choose plain wheat bread without any seeds or nuts. 

<DIRECTIONS>

1. In a large bowl, combine chopped hard boiled eggs, chopped celery, chopped apple, mayo, and black pepper. Stir until everything is well combined. 

2. First, place two slices of apple on the bread, then place 1/4 egg on top of the apple slices, and then add the egg salad on top. Cover up with another slice of bread to finish. Add green onion to garnish and additional black pepper to taste. Enjoy!
