Baked Salmon & String Beans with Onions

Healthy eating doesn’t need to be compromised when you have a busy life! By taking shortcuts in food preparation, you can still enjoy tasty and nutritious meals throughout the week!  

The shortcut: use one baking dish to cook TWO dishes – baked salmon & string beans with onions – at the same time! 🙂

P.S. this recipe is kidney (renal diet) friendly! Both string beans and onions are low in potassium if you’ve been advised to watch your potassium intake. 

<INGREDIENTS>

For baked salmon: salmon fillets, sliced garlic, black pepper, tiny pinch of sea salt.

For string beans with onions: chopped string beans, chopped onions, minced garlic, black pepper, olive oil, tiny pinch of sea salt. 

<DIRECTIONS>

1. Place chopped string beans, chopped onions, and minced garlic in the baking dish. Drizzle olive oil over the vegetables and add in black pepper and a tiny pinch of sea salt. Toss with fork or spoon or chopsticks to combine everything. 

2. Place salmon fillets over the vegetables. Top the fillets with slices of garlic and sprinkle black pepper and a tiny pinch of sea salt over to season the fillets. 

3. Bake in oven at 425°F for 20-25 minutes or until cooked. 

4. Place the baked salmon fillets on one plate and the string beans with onions on another plate. Serve. Enjoy these two dishes together with either steamed rice or boiled noodles. Enjoy your meal!
